The restaurant claims the freedom to invent new Mediterranean flavors, faithful to this region, its products, and its artisan producers.

Inspired by the spirit of Naturalité, this philosophy is expressed both through the original technique of cooking over fire where a whole fish or piece of meat is grilled, and through long and complex preparations that enhance the flavor of the products.

Originally from Saumur, the chef began his training in his hometown. After four years of studying cooking and pastry, he decided to travel across France to refine his skills. His journey took him from Saumur to Quiberon, Evian, and Bordeaux, among others.

During this time, he explored a variety of culinary styles, ranging from traditional to gastronomic cuisine, all while shaping his own unique culinary identity.

With this new chapter, he is delighted to share his creations, his culinary universe, his passion, and his first love with you.

A cuisine recognized by Gault & Millau in the 109th edition of its 2023 guide.

Mori

The Well - Sofiemyr - NORWAY

At the top of The Well hotel, Restaurant Mori offers a breathtaking view of the surrounding forest, as its name suggests. Head Chef Richard Bocarro and his team craft an exciting menu featuring Asian-inspired flavors and locally sourced, wild ingredients. A Ver Tavira is not just a restaurant, it is also the vision of a chef who is passionate about the richness of local produce and the authenticity of Algarve cuisine. With the desire to capture the essence of Tavira and transform it into memorable culinary experiences, chef Luís Brito began exploring the local landscapes and markets, taking inspiration from the ingredients that nature and the sea generously offered.

From the outset, the restaurant’s concept was clear: to create a cuisine that was both deeply rooted in tradition and daring in innovation. The name ‘A Ver Tavira’ reflects this perfectly, as it refers to the stunning view over the city and the River Gilão, but also to the idea of ‘seeing’ Tavira through the flavours, aromas and stories told in each dish.
